Description
The Wagyu Coulotte has been recently "rediscovered" in popular food circles because of its very recognizable, triangular shape, and its thick cap of fat (it is a top sirloin cap roast) is left on to provide a very flavorful cooked product. It's more famously known as "Picanha" in Brazil and Brazilian steak houses, and we highly recommend giving this beautiful small roast at try.
Preparation
This sirloin roast does very well over open flames, but is more commonly roasted or smoked to allow that beautiful fat cap to do its thing.
